Solve this for a fellow chocoholic, please.

Why have I never enjoyed flourless chocolate cake? Why is it that I expect the concept to conjure up something deep and rich (like my favorite three-ingredient no-flour peanut butter cookies) like a block of pure chocolate frosting shaped into a gooey dense wedge, but instead I'm served something that tastes like a kitchen sponge that was sitting in a sink full of cocoa water? That makes me say, "Maybe this could have used some flour"? Why is everyone giddy for this beast?

(Three-ingredient peanut butter cookies: 1 cup natural no-sugar peanut butter, 1 cup sugar, 1 egg, mix, drop by spoonfuls onto cookie sheet and bake at 400 deg F for 8 minutes.)
